Gyutou is the Japanese version's Chef's knife, it is a double bevel blade and the body is usually thinner than European knife.Traditionally, Gyutou is used for slicing meat, but nowadays it has developed into a multi-purpose knife! Common size for Gyutou is around 18-21cm.

 

It has a round shape that is easier to slice meat and fish, while its height provide enough room for chopping motion. But please keep in mind that DO NOT use it for chopping bones and frozen food.
