Usuba is used for chopping vegetables, it is similar to Nakiri. The blade is thin and straight, the common size is around 16-19cm. In Japanese cuisine, it is popular for peeling cucumber.
There are two main style:
1. Usuba : This is the most common shape.
2. Kamagata Usuba : This is the Kansai version , it has a pointy tip for carving purpose.
